Chicken Leeks Salsa Verde: 1 tablespoon of drained capers, 3 garlic cloves, 1 filet of anchovies, 4 – 5 tablespoons of olive oil, 1 pinch of crushed red peppers, 1 cup of parsley leaves, 3 tablespoons of butter, 1 lemon, 1/2 cup of long grain rice, 2 3/4 cups of chicken broth, 1 1/2 pounds of skinless, boneless chicken thighs.
